Lee’s Organic Vegan Cranberry Walnut Chutney
2 Bags of Organic Cranberries
2 cups of spring water
1/8- 1/4 Cup of Organic Vegan Brown Sugar
1 Cup Organic Walnuts
15 -20 Organic Medjool Dates
Adjust amount of Brown Sugar and dates for level of tangy sweetness.
- Add all ingredients to a pot that has a lid, bring to a boil and cover allowing cranberries to explode
- Reduce heat stir occasionally to stop it from sticking.
- When it becomes a thick pudding like consistency put in container allow to cool then chill in refrigerator.
Great with curry dish, on french toast and of course with roasted pumpkin and vegan stuffing loaf…
