Vegan no cook veggie bean soup
- 1 cup spring water
- 1 can organic diced tomatoes
- 2 cans organic garbanzo bean (save the liquid (aquafaba) in a glass jar and refrigerate for an upcoming dessert)
- 1/4 cup Braggs Liquid Aminos
- 1 small onion
- 4 stalks of organic celery
- 2 large organic carrots
Empty diced tomatoes into a pot. Use cup of water to rinse the tomato left in can then add to pot. Empty drained garbonzo beans and 1/4 cup liquid aminos. Stir and add chopped onion and celery then stir again. Grate the 2 large carrots and stir into mix.
Let sit 1-2 hours and marinade (overnight in the refrigerator is even better)
This can be served cold as is or gently warmed (not boiled).
