Save the life of a Turkey and “Eat More Pie”
I am thankful my beloved husband Rick became a vegan in 2011 because it means we can have a longer healthier life together. I am thankful to be able to step out our door and go hiking in a National Park. I am thankful for the gifts the Universe gives me each day. I am thankful to be alive.

Quick meal you can make tomorrow especially of you are new to a Vegan Thanksgiving where the animals are thankful you are not eating them 😉
Vegan Stuffing Loaves
mix 1 loaf Food For Life 7 Sprouted Grains cubed & dried, 1 can small olives crushed & crumbled, 1/2 cup celery sliced, 1 small onion diced, 2 cups ground & whole pecans, Fresh Basil and Oregano leaves chopped, 1-2 tbs Braggs Aminos, 2 tbs flax seed mixed with 5 tbs of hot water (egg substitute), Heat 3-4 cups NOT-Chick’n (boullion cubes in hot water) Broth slowly mix Cover loaf with foil then Bake at 350 for 1 hour (bake sweet potatoes at same time) remove foil and bake 15-20 to brown
steamed then stirred in fresh squeeze lemon juice and brown sugar on medium until a glaze formed.
Saute in 1/4 cup olive oil sliced Baby Portobello Mushrooms, Onions, Fresh Basil and Oregano leaves chopped, When mushrooms begin to brown add brown rice flour a little at a time until oil is absorbed. Slowly add NOT-Chick’n Broth until desired thickness is achieved.
- Drained liquid from two cans of garbanzo beans chilled overnight in refrigerator (aka aquafaba)
- 1/2 – 3/4 cup of organic sugar or agave or maple syrup (your choice)
- 2 bananas
- 1/2 cup coconut flakes
- 1 orange
Mash the 2 bananas, then mix in coconut flakes. Section, slice orange wedges and add to banana coconut mix. Set aside for later.*
Pour chilled aquafaba into a mixing bowl. Whip until snowy white and forms peaks. When thick gradually add your preferred sweetener until thoroughly mixed. The marshmallow like whip should become stiff and glossy. Add the banana combo and continue to mix. Scoop into containers (this makes 8 pints) and freeze approximately 5 hours although overnight is best. Make in the morning and it would be ready for an after dinner evening treat.
*Bananas plus any favorite fruit works. I have be successful using cranberries, kiwi fruit, grated apple and berries. Crushed and ground nuts, vegan chocolate chips, cinnamon, nutmeg etc. are perfect additions too.
Vegan no cook veggie bean soup
- 1 cup spring water
- 1 can organic diced tomatoes
- 2 cans organic garbanzo bean (save the liquid (aquafaba) in a glass jar and refrigerate for an upcoming dessert)
- 1/4 cup Braggs Liquid Aminos
- 1 small onion
- 4 stalks of organic celery
- 2 large organic carrots
Empty diced tomatoes into a pot. Use cup of water to rinse the tomato left in can then add to pot. Empty drained garbonzo beans and 1/4 cup liquid aminos. Stir and add chopped onion and celery then stir again. Grate the 2 large carrots and stir into mix.
Let sit 1-2 hours and marinade (overnight in the refrigerator is even better)
This can be served cold as is or gently warmed (not boiled).
Lee’s Organic Vegan Cranberry Walnut Chutney
2 Bags of Organic Cranberries
2 cups of spring water
1/8- 1/4 Cup of Organic Vegan Brown Sugar
1 Cup Organic Walnuts
15 -20 Organic Medjool Dates
Adjust amount of Brown Sugar and dates for level of tangy sweetness.
- Add all ingredients to a pot that has a lid, bring to a boil and cover allowing cranberries to explode
- Reduce heat stir occasionally to stop it from sticking.
- When it becomes a thick pudding like consistency put in container allow to cool then chill in refrigerator.
Great with curry dish, on french toast and of course with roasted pumpkin and vegan stuffing loaf…
